Heir to four generations of Alsatian bakery and pastry-making tradition, Pierre Hermé began his career at the age of 14 as an apprentice to Gaston Lenôtre. Renowned for his talent of cleverly associating tastes, sensations and flavors, Pierre Hermé offers a truly Parisian gourmet experience to the Qatari public.
Q: How do you combine your technique and creativity in coming up with new flavors?
PH: Technique and rigor are important elements in pastry which you have to use in order to create. It is this control and knowledge that allows me to be completely free in terms of creativity. I never limit myself during the creation phase and then I try to do everything possible in order to find the technical solution to make it possible.
Q: What is the most creative and favorite part of your work?
PH: Every part of my work is creative – I am constantly creating, thinking, coming up with new ideas. I couldn’t choose one favourite part. The challenge that interests me is always making something exceptional and passing on this knowledge and know-how to the teams of pastry chefs that work at Pierre Hermé Paris. I strive to create a global sensory experience that touches upon all five senses and brings pleasure to the person enjoying it.
Q: Do you customize macarons/cakes according to the location/destination?
PH: We do not adapt our flavours for the different markets, to local taste, culture or habits. Tastes and preferences may vary, but our aim is to introduce new flavour combinations and experiences and provide people with something different. My priority will always be taste. Of course, that doesn’t mean I can’t be inspired by ingredients from all around the world, actually it is very much the case…but the result will be sold in all boutiques around the world, not just in the market where the inspiration came from.
Q: How do you differentiate yourself from competitors?
PH: I don’t think about competitors. I don’t look at what other people are doing – I follow only my own creative instinct and I’m not interested in trends or what is happening in the market – this is perhaps what differentiates me. My goal is to introduce a unique universe of tastes, sensations and pleasures to our clients in each and every country.
Q: What are your future plans in regards of new shops opening? How do you see your brand growing and expanding?
PH: Pierre Hermé Paris is an international company with almost 50 boutiques in 12 countries worldwide. On my end, my goal is to continue to create. Keep surprising and providing pleasure to gourmets all around the world. We’re currently working on various ongoing projects, new concepts and new openings…but that’s all I can say for now!
